As the world faces fears of a growing food shortage, a new alternative source of food – microgreens — is gaining traction. With new technologies for farming besides traditional soil and water, we could innovate new ways to sustain our diets. I visited farms and grew my own microgreens to better understand how this process could be streamlined to encourage the culture of one meatless day a week.
